Shannon Blust

Shannon Blust, originally from Lancaster, Pennsylvania, brings over 25 years of food, beverage and entertainment experience to the Mayflower. Shannon is a leader specializing in multilocation operations, large-scale event execution and financial management. Prior to accepting the Director of Dining Services position at The Mayflower, he oversaw dining services, banquets and special events for both the Hard Rock Live and Cafe.

Prior to joining Hard Rock, he held executive leadership roles at several world-renowned brands. As the Executive General Manager at Wolfgang Puck Kitchen & Bar within the Brownwood Hotel & Spa, he directed all restaurant and private event operations, as well as live entertainment. His background also includes significant experience in large-scale openings; as the F&B Area General Manager for Margaritaville Resort Orlando, he successfully launched six diverse dining locations and served as the Resort Beverage Director and Live Entertainment Director.

After moving to Florida 19 years ago to accept the position of Creative Entertainment Staging Director at Walt Disney World's Magic Kingdom, he transitioned to F&B Management with Wolfgang Puck at Downtown Disney in 2010. His F&B career is anchored by a strong foundation in the Disney Springs circuit, where he served as Senior Operations Manager for iconic venues including The Edison, Morimoto Asia and Wolfgang Puck’s Fine Dining Room and Express locations. Shannon's most rewarding achievements are being a husband and father to his wife Carolyn and sons Aidan and Teagan, who are his greatest joy.
